Flour Tortillas

Ingredients:

680g All-purpose Flour
100g Lard
7g Kosher Salt
360g Warm Water, (about 90F)

Dice the lard and place it in the bowl of a stand mixer with the flour. Using the paddle attachment mix until the mixture resembles bread crumbs. Dissolved the salt in the water. Once completely dissolved using a dough hook on a medium speed slowly add the water to the flour / lard mixture. Mix until smooth.

Portion out 140g balls, (approximately 8) for burrito size. Let the balls rest, covered for at least 30 minutes. Once rested, flatten the balls and crimp the edges so that it looks like a big ravioli. Roll out to about 14”. Heat a large, wide, ungreased pan or tray over medium heat and cook the tortillas for 20-30 seconds, flip and repeat on the other side. Store the finished tortillas wrapped in a clean kitchen towel or tortilla container as you work
